Healthy chicken meatballs with carrot rice

For this healthy delight you will need 600 gr. minced chicken meat, three small yellow, red and orange peppers, one red onion, 5 cloves of garlic, white wine to taste, salt, one egg, two carrots, a mug of rice, a teaspoon of garlic powder, half teaspoon of cumin, two bay leaves, a teaspoon of saffron, chives, olive oil, three grape tomatoes, oatmeal to make the balls.

For the meatballs: Place the minced chicken meat in a bowl and season with salt, garlic powder, cumin powder, saffron, chives and the egg. Mix everything very well, make small balls and set aside. Make a stew by putting the olive oil with half the onion, 3 cloves of garlic, the three peppers, a bay leaf. When it starts to brown, add the white wine and let it evaporate, then add the tomatoes and salt, let it cook a little, pass the balls in oatmeal and put them in the pan, add water if necessary. Let it cook for five to ten minutes over low heat.

For the rice: place the other half of the onion and the 2 cloves of garlic in a pan, the bay leaf in sautéing oil, adding the carrots in small pieces and a mug of rice, stirring for a minute. Add two and a half mugs of hot water and let it cook.
