colorful and healthy cod

For this healthy recipe, you will need three pieces of cod, 2 carrots, half a cup of small peas, a slice of pumpkin, 5 eggs, a sweet onion, a red onion, 2 cloves of garlic, olive oil to taste, parsley, three potatoes, a bay leaf.

Place a pan of boiling water, when it starts to boil, add the three cod fillets and cook for three minutes. Remove the slices and in the cod cooking water place the potatoes, carrots, pumpkin and peas in cubes. After boiling, cook for 10 minutes, remove the water and set aside. Boil the eggs separately for 8 minutes.

Make a stew with the onions, garlic and bay leaf. When the onion is transparent, add the codfish and the potato and vegetable preparation, mix everything. Peel the eggs, cut them into slices and add the chopped parsley to the pan, mix everything and turn off the heat. Serve on a platter.
